Sweet Potato Chips
These are a fantastic alternative to chips! Use them to dip into hummus or tzatziki.
Ingredients
1 sweet potato, olive oil, dried oregano, sea salt, and pepper.
Directions
Peel a sweet potato and slice thin
Brush a baking sheet with olive oil
Lay the sweet potato slices close together
Brush sweet potatoes with olive oil
Sprinkle sea salt, pepper, and dried oregano all over
Roast in the oven at 425 degrees for 12-17 minutes
Nutrients
Sweet potatoes provide vitamin C, potassium, and are an excellent source of vitamin A.
Kelly’s Tips
You can add parmesan or feta to melt on top while baking in the oven. This can be served as a side dish for lunch or dinner. I would make extra and use the leftovers as a snack.
